DID SOMEONE SAY SOUP?!
One of my FAVORITE things about fall is the SOUP!!! And this is one of my family’s favorite. The best thing about it though is how SIMPLE and QUICK it is to make. I am ALLLLLL about the quick and simple meals.
So here it is!
1-2 lbs Ground Turkey
2-16 oz cans corn
2- 16 oz can black beans
2- 16 oz cans stewed tomatoes
1- 15 oz can of tomato sauce
1- 7.75 oz can El Pato Hot Mexican Style Tomato sauce
2- McCormick taco Seasoning packets (no MSG)
1- 4 oz can diced green chiles
48 oz vegetable broth
(Optional veggies to hide in soup: spinach, zucchini, and squash)
Shredded cheddar cheese
In big pot, brown turkey meat and diced onion until cooked (add optional diced veggies too). Add in taco seasoning and chiles as they are cooking. Throw in the rest of the ingredients (draining corn. Drain and rinse black beans). Bring to a boil and serve.
Top with chopped cilantro, cheese, sour cream, and crushed chips.
How easy is that?! Done in about 15 minutes!
